Healthy Summer Snacks Plate of Pancakes On Plate with Fresh Berries

As the weather heats up and summer is in full swing, the last thing we want to be doing is cooking a hot meal in our kitchen for hours. We’re after quick and refreshing healthy snacks to munch on in between trips to the beach and heading out on a hike with friends. Luckily, we have compiled some of our favourite healthy snacks to keep you full and feeling great this summer!

Healthy Blueberry Summer Pancakes

This recipe is a great snack to whip up that’s sure to impress your family and friends this summer. Perfect for a late breakfast, a treat throughout the day or a summer dessert to satisfy those sweet cravings – it’s a guilt-free snack we absolutely love!

Serves: 2

Makes: 10-15 Small Pancakes

Time: 1 Hour (Including Prep Time)

Ingredients:

Pancake Mix:

  • ½ cup of milk or your preferred milk alternative
  • 2 Eggs
  • 2 Ripe Bananas
  • 1 Cup of Oats
  • 1 tsp of vanilla extract
  • A pinch (or two) of Cinnamon
  • 1 Cup of frozen Blueberries

Topping:

  • Fresh fruit (Strawberries, Blueberries and Raspberries)
  • Coconut Ice-Cream or Yoghurt

Method:

  1. Blend together milk, eggs, bananas, oats baking powder, vanilla extract, and cinnamon into a blender until batter is smooth.
  2. On a fry pan on low to medium heat, pour the batter into the pan. Then, take your frozen blueberries and place them in each pancake.
  3. Cook until small bubbles appear on each pancake and the pancakes are golden brown underneath. Then flip.
  4. Continue cooking until all the batter has been used. Then the pancakes are ready to serve.
  5. Cut up your fresh fruit and top your pancakes with coconut ice cream or yoghurt and your fruits.
  6. Eat and enjoy!

Summer Berry Acai Bowl

This refreshing Acai bowl will be your go-to snack this summer. Not only is it Instagram worthy, but it’s easy to make and tastes amazing too! Great for a post-gym feed or when you’re looking for something a little more filling.

Serves: 1

Makes: 1 Acai Bowl

Time: 10 Minutes

Ingredients:

Acai Mix:

  • ¼ cup of frozen raspberries
  • ¼ cup of frozen blueberries
  • ¼ cup of frozen strawberries
  • 1 tsp of Acai powder
  • 1/3 cup Fruit Juice of choice

Topping:

  • Granola
  • Cornflakes
  • Chia Seeds
  • Pumpkin Seeds
  • Coconut Flakes
  • Peanut Butter

Method:

  1. Blend frozen blueberries, strawberries, raspberries, and Acai powder together with the fruit juice until forming a smooth consistency. If not blending properly, add a little bit of cold water to the mix.
  2. Transfer mix to your bowl and add the Acai bowl toppings.
  3. Eat and enjoy!

Tomato and Bocconcini Bites

This snack is a great treat to enjoy on those lazy summer afternoons or to keep you fuelled while working…. basically, they’re delicious all summer long!

Serves: 1-2

Makes: 15 to 20

Time: 10 Minutes

Ingredients:

  • 1/2 punnet of cherry tomatoes
  • 1/2 packet of basil
  • 1/2 small tub of cheery Bocconcini cheese

Method:

  1. Cut the cherry tomatoes and Bocconcini in half
  2. On a toothpick or small skewer, assemble the bite by adding a small basil leaf, then the cherry tomato topped off with the Bocconcini.
  3. Drizzle balsamic vinegar over the top and season with salt and pepper to serve for added flavour.
  4. Eat and enjoy!

Fresh Watermelon & Feta Salad

No summer snack article is complete without a watermelon recipe. This salad recipe is a great one to bring to summer barbeques or to enjoy as a little afternoon snack. Refreshing and flavourful, you won’t regret giving this one a go!

If you’re looking to make this recipe into a whole meal, try adding some grilled chicken. It pairs perfectly with the flavours of this summer salad.

Serves: 4

Makes: 1 Large Salad

Time: 15 Minutes

Ingredients:

  • 1 watermelon, cubed
  • 1 cucumber, chopped
  • 250g crumbled feta
  • 250g red onion, thinly sliced
  • 1 packet of mint leaves, chopped
  • ½ tsp salt flakes (aka kosher salt)
  • 4 cup of extra virgin olive oil
  • 2 tbsp red wine vinegar

Method:

  1. In a bowl combine the olive oil, red wine vinegar and salt
  2. In a separate bowl combine the watermelon, cucumber, mint, feta, and red onion.
  3. Pour the dressing over the salad and toss to combine.
  4. Eat and enjoy!
